- 118.29 ml ground flax seeds
- 4.92 ml baking soda
- 4.92 ml salt
- 4.92 ml cinnamon
- 2.46 ml nutmeg
- 2.46 ml cardamom
- 118.29 ml butter (room temperature)
- 118.29 ml natural cane sugar
- 2 eggs
- 118.29 ml honey
- 4.92 ml vanilla extract
- 1 small apple, peeled & chopped
- 118.29 ml raisins
- 118.29 ml chopped apricot
- 354.88 ml flaked coconut
- 709.77 ml rolled oats
- 59.14 ml applesauce
directions
- Preheat oven to 350.
- Stir together flour, salt, baking soda and spices.
- In a mixing bowl, beat butter and sugar together.
- Add in honey, eggs, and vanilla.
- Slowly add in dry mixture and beat together.
- Stir in oats, applesauce, coconut, and fruit.
- Drop by spoonfuls onto a greased baking sheet.
- Bake 12-14 minutes.

I've been a strict vegetarian for almost a year, and I'm constantly looking for new ideas for vegetarian/vegan meals and desserts. I'm not technically a vegan, but I don't drink milk or eat eggs due to stomach issues. I typically stay away from dairy-and/or-egg-based foods, but if a recipe contains one or both of them, but it isn't the main focus, then I'll eat it.
I'm also allergic to hot peppers (like jalapenos, habaneros, and chipotles), and am generally sensitive to spiciness, so I'm always looking for recipes with flavor, but without the spice.
