Oatmeal Raisin Cake Mix Cookies

  • Preheat oven to 350 degrees. Soak raisins in water 30 to 60 minutes or until plump; drain well.
  • Combine cake mix, cinnamon, eggs, oats and oil in large bowl. Beat at low speed with electric mixer until blended. Stir in raisins. May chill dough in refrigerator until ready to bake. Drop dough by rounded teaspoonfuls onto prepared baking sheets.
  • Bake at 350 degrees for 10 to 12 minutes or until lightly browned. Cool 1 minute on baking sheet. Remove and cool completely.

  1. These are really good. They do not have the texture of a "real" oatmeal cookie but they do taste very good. If you want to make a simple oatmeal cookie this is the one. I did not add in the raisins and DH is not a huge fan. I did add in some mini chocolate chips as he does love those! I plan to make these again for the holidays and will make a batch with raisins for company. I will add these to my cookie cookbook. Thank you edited 12/16/08 made 3 doz more today for Christmas platter and did add in raisins. OH YUM!
     
  2. This recipe was good. I did modify it which is the reason for the 4 stars. Maybe if I would have followed it to a 'T' it would get 5. Anyway, I used 1/2 c. applesauce instead of the oil and I used 1/2 c. eggbeaters in place of the eggs. I don't think the eggbeaters made any difference, but the applesauce made this more cake-like than cookie-like. I knew that would happen. I had to cook mine for over 15 minutes. I overall liked this cookie, especially the added touch of cinnamon. Thanks.
