  1. In a large bowl, mix oats and milk.
  2. Let sit for a few minutes.
  3. Beat in pumpkin, egg whites, egg, butter, and sugar.
  4. In another bowl, mix together the flour, baking powder, salt, and spices.
  5. Gradually stir into the pumpkin mixture until it's combined.
  6. Pour into a greased 9x5-inch baking loaf pan.
  7. Bake at 350 degrees for 55-60 minutes.
  8. Remove from oven and let cool in pan 20 minutes.
  9. Remove from pan to rack to cool.
