WOW, this is a fantastic recipe!!!! It works like a charm, comes together in nearly no time (even if you make your own oatflour like I did) and tastes sooooooo good! Luved the soft texture this had in the middle of the pie and the lovely crunchy crust it made. I too had to double the recipe to fit a 7 1/2 inch pie plate. I had to double this recipe to fit a 9-1/2 inch pie plate. I used it as the crust for a quiche, and while it has no flavor of its own, it does work as a crust. I think it could be made better with some salt and a little oil. Definitely worth working on.
