Oatmeal Pecan Chocolate Chip Cookies

Ingredients:

Serves: 16

Yield: 16.0 cookies

• ¾ cup oat flour
• ½ cup all-purpose flour
• 1 cup old-fashioned oatmeal
• ¾ teaspoon baking powder
• ½ teaspoon baking soda
• ½ teaspoon salt
• ¾ cup Splenda sugar substitute
• ½ cup brown sugar
• 1⁄3; cup butter , softened
• 1 ½ teaspoons vanilla extract
• 1 large egg
• ¼ cup pecans
• ¼ cup miniature semisweet chocolate chips

Directions:

1. Preheat oven to 350.
2. Mix first 6 ingredients.
3. Mix next 5 ingredients (through egg) in a separate bowl.
4. Gradually add flour mixture to eggs/butter.
5. Fold in nuts and chocolate chips.
6. Drop dough in tablespoons onto cookie sheet.
7. Bake for 8 minutes.
