Oatmeal Peanut Butter Chocolate Chip Cookies

"These cookies have just the perfect texture. If you are in a hurry they are still good just adding in the 1 cup oats in without grinding them. If you are adding in chopped nuts then reduce the chocolate chips slightly. This cookie dough can be prepared, shaped and then frozen to bake later, the dough freezes well."

  • In a food processor PULSE 1 cup oats (1 cup only) until ground fine.
  • In a large bowl, stir together ground oats, remaining 1/2 cup whole oats, flour, baking powder, baking soda and salt.
  • In another large bowl with an electric mixer, beat together softened butter and both sugars until light and fluffy (about 3-4 minutes).
  • Add in eggs, vanilla (or maple extract if using, can use both, 2 tsp maple and 1 tsp vanilla!) and peanut butter; beat until well combined (about 1-2 minutes).
  • Beat in the flour mixture until combined.
  • Add in chocolate chips, grated chocolate and nuts (if using) mix well to combine.
  • Set oven to 325°, and set oven rack to second-lowest position.
  • Form the dough into rounded balls and place on a light-greased cookie/baking sheet about 2-inches apart on the sheet.
  • Bake cookies for about 12-15 minutes or until just pale-golden.
  • Cool cookies on baking sheet for 5 minutes and then transfer to racks to cool completely.

My subs: applesauce for half the butter, whole wheat flour instead of regular (used about 1/8 cup less since WW sucks more moisture) and added none of the optional items (did use chunky peanut butter). These taste amazing, the dough tasted amazing too :-) They took the longer amount of baking time, about 15 minutes, until they were done. Thanks for another keeper Kittencal!
     
  2. Perfect! My son and I decided we wanted oatmeal, chocolate chip, peanut butter cookies, and this was the highest rated recipe for those. So glad we made it. Kitten is a genius. Didn't grind the oats, but otherwise followed the recipe. I got 4 dozen wonderful cookies with a hint of peanut butter after they are baked. Crisp on the outside and soft on the inside. My husband ate 6 of them right out of the oven while informing me he didn't eat peanut butter cookies, so I'd say that's a 5 star review!
     
  3. These cookies didn't flatten down and acted as if there was too much flour in them. I then read the reviews and carefully re-read the recipe to see if I had inadvertently added incorrect amounts. Not so. I don't know why these didn't turn out well for me. they were way too cake-like.

  5. My favourite cookies! I sub whole wheat flour for about 1/2 the total and I never measure the peanut butter - I just eyeball it. I tend to cook them for 10-12 minutes in my oven. I get about 6 dozen 2.5-3" cookies per batch. Thanks!

  1. These cookies are great! I made 1/4 batch and this made about a dozen. I baked mine at 350 for 12-13 minutes. I left out the nuts and grated chocolate, but added peanut butter chips instead.
