Oatmeal Pancake Mix

"From American Profile magazine in our local town newspaper. (March 2007) Not sure of the times listed so if you make this recipe and I'm way off, please let me know."

  • Mix all ingredients together well. Store in a sealed gallon-size plastic storage bag or airtight container. Yield: 10 c pancake mix.
  • To make pancakes: Beat eggs in large bowl. Gradually beat in oil. Alternately add 2 cups pancake mix and water to mixture. Blend well. Preheat and oil griddle. Pour 1/3 c batter per pancake onto griddle. Cook until bubbles form around edges, turn and continue to cook until done.

  1. I would use quick oats next time around as the rolled oats were hard little chewy bits in the finished pancake.
     
  2. We are so stuffed right now from these pancakes! Fabulous combination of grains & spices. You'll receive 10 cups of mix when you are finished. My kids raved about the flavor of the cinnamon! Adopted chef from PAC April 2008...you make a chef mom proud!

I'm a RETIRED high school administrator. I love to cook and my husband is a patient taste tester for me (poor baby)! Very lucky he is not a picky eater! We have an awesome son and daughter-in-law but unfortunately they live in Los Angeles so not much physical visiting. Lots of phone calls though! ? I love collecting cookbooks (drives my husband crazy), logo golf balls, and salt & pepper shakers (thanks to getting started with the old recipezaar swaps!). Recipezaar/Food.com has been a fantastic site for me. I have learned a ton at this site and really enjoy all of the forums (I think I'm getting addicted to the Swaps!!) My next big challenge is to learn how to put photographs on of the dishes I am making. Suggestions are definitely invited!!
