  1. Combine oatmeal and buttermilk in medium bowl.
  2. Stir to mix well.
  3. Cover bowl and let stand 30 minutes.
  4. Stir together flour, baking powder, baking soda and salt in medium bowl; set aside.
  5. In small bowl combine oil, brown sugar and egg.
  6. Stir into oatmeal mixture.
  7. Pour oatmeal mixture into flour mixture.
  8. Stir just to moisten dry ingredients.
  9. Gently stir in apricots.
  10. Divide batter evenly in muffin cups, filling 3/4 full.
  11. Sprinkle with sugar.
  12. Bake @ 350 degrees 20-25 minutes.
