Oatmeal Flax Breakfast Squares

- 3 cups quick oats
- 3⁄4 cup whole wheat flour
- 3⁄4 cup flax seed meal
- 3⁄4 cup dried apple (chopped into small pieces)
- 1 teaspoon baking soda
- 3 cups walnuts
- 1 1⁄2 cups applesauce
- 1⁄2 cup olive oil
- 2 eggs
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1⁄4 cup Splenda granular, sugar blend
- 1⁄2 cup Splenda brown sugar blend
directions
- Mix all the wet ingredients then add in all the dry ingredients. Personally, I don't chop my walnuts, I find that they get pretty minced up if I add them in as a first dry ingredient while using my Kitchenaide. I would chop them first if you are mixing by hand.
- Heat oven to 350°F.
- Grease a 9x13-inch pan and pour in the mixture.
- Bake for 20 - 30 minutes.

While I enjoy cooking I just don't have tons of time in the kitchen to make complicated dishes, so I really like easy, fast, cheap, and healthy meals. I am under the delusion that there is a perfect cookbook out there somewhere, but am probably mistaken ;) Finding the perfect cookbook is probably like finding the perfect purse, it'll never happen but I keep trying!
