Adapted from a recipe in Cooking Light. These yummy, filling, healthy muffins are the perfect alternative to cereal. If you don't like dates, any dried fruit will work.

  1. Combine oats and buttermilk and refrigerate for 8 hours.
  2. Preheat oven to 350.
  3. Combine flour, buttermilk mixture, brown sugar, canola oil, baking powder, baking soda, salt and eggs in large bowl.
  4. Beat with a mixer on medium speed until smooth.
  5. Fold in dates.
  6. Bake in muffin tins at 350 for 12-15 minutes.
  7. Cool muffins on wire rack.

Thanks for this great recipe! I only soaked the oats in buttermilk for about 20 minutes. I subbed peanut oil for the canola oil and raisins for the dates. I also added 1 large shredded carrot, 1 tsp cinnamon, 1 tsp ginger, 1/2 tsp nutmeg, 1/2 tsp all spice, and 1/2 tsp cloves. I had to bake a little longer since they were wetter from the carrots (approx 22 minutes), and the recipe still made 24 for me. Thanks so much!
