Mirjam, this is the second recipe of yours I tried today, and I can't decide which is better! I halved this recipe and used chopped almonds. I didn't have quick-cooking oats so I used rolled oats, substituted applesauce for the butter, and reduced the brown sugar to 1/4 cup. I baked for 30 minutes. They were a little sticky on the underside, but that didn't stop me from gobbling all the leftover crumbs in the pan. The orange marmalade adds an awesome tang! This makes the perfect healhy snack that I was looking for!
- 4 cups quick-cooking oats
- 1 1⁄2 cups chopped nuts
- 1 cup firmly packed brown sugar
- 1 cup coconut
- 1 teaspoon salt
- 3⁄4 cup butter or 3⁄4 cup margarine, melted
- 3⁄4 cup orange marmalade
