Oatmeal Cranberry Applesauce Muffins

Whole wheat and oatmeal come together with tangy dried cranberries and cranberry sauce to make a tender and slightly chewy, healthy muffin! Originally from Joy the Baker.

  1. Preheat oven to 375 degrees.
  2. In a large bowl combine flour, oats, baking powder, baking soda, salt and cinnamon.
  3. In a medium bowl combine applesauce, buttermilk, sugar, oil and egg. Make a well in dry ingredients and add applesauce mixture and dried cranberries.
  4. Stir until just moist.
  5. Fill muffin cups 2/3 full, adding a tsp of cranberry sauce in the middle of each cup.
  6. Bake for 16-18 minutes.

Loved this recipe. We used 1 cup of frozen whole cranberries since we didn't have cranberry sauce and multi grain flour since we didn't have whole wheat flour. They turned out great.

Thumbs up from every member of my family for this one! I omitted the cranberry sauce because I didn't have any and the muffins still had a good cranberry taste to them. The extras (I made a double batch) froze beautifully too and warmed nicely in the microwave for our weekday breakfasts on the go.

Good! A healthy low fat muffin that even the kids enjoyed. Dried cranberries and a dollop of cranberry sauce make the recipe. Thanks for sharing!
