Oatmeal Cranberry Applesauce Muffins

Whole wheat and oatmeal come together with tangy dried cranberries and cranberry sauce to make a tender and slightly chewy, healthy muffin! Originally from Joy the Baker.

Loved this recipe. We used 1 cup of frozen whole cranberries since we didn't have cranberry sauce and multi grain flour since we didn't have whole wheat flour. They turned out great.

  1. Preheat oven to 375 degrees.
  2. In a large bowl combine flour, oats, baking powder, baking soda, salt and cinnamon.
  3. In a medium bowl combine applesauce, buttermilk, sugar, oil and egg. Make a well in dry ingredients and add applesauce mixture and dried cranberries.
  4. Stir until just moist.
  5. Fill muffin cups 2/3 full, adding a tsp of cranberry sauce in the middle of each cup.
  6. Bake for 16-18 minutes.
