- 1 1⁄2 cups light brown sugar
- 1 cup salad oil
- 1 tablespoon vanilla
- 2 large eggs
- 2 cups flour
- 1 1⁄2 teaspoons baking soda
- 1 teaspoon salt
- 3 cups quick-cooking oats
- 1⁄4 cup granulated sugar
directions
- Preheat oven to 375°F.
- In a large bowl, with mixer at medium speed, beat brown sugar, salad oil, vanilla, and eggs until smooth.
- With mixer at low speed, beat in flour, baking soda and salt until blended.
- With a spoon, stir in oats.
- Place sugar in a bowl.
- Roll level tablespoons dough into balls; roll ball in sugar and place on a large greased cookie sheet, about 2 inches apart.
- Bake about 10 minutes or until golden, remove to wire racks to cool.
- Store cookies in a tightly covered container.
