Oatmeal Cookies

"Quick and simple caramelly cookies. From the Company's Coming Cookie Cookbook."

• Yields: 3 1/2 dozen

ingredients

• 2 large eggs
• 1 cup firmly packed brown sugar
• 1⁄2 cup granulated sugar
• 1 cup cooking oil
• 1 teaspoon vanilla
• 1 teaspoon baking soda
• 1 tablespoon hot water
• 2 cups rolled oats
• 1 1⁄2 cups all-purpose flour
• 1 teaspoon salt

directions

1. In mixing bowl, beat eggs until frothy.
2. Beat in both sugars.
3. Add cooking oil & vanilla.
4. Dissolve baking soda in hot water; stir into sugar and egg mixture.
5. Add oats, flour & salt; stir well.
6. Drop by spoonfuls onto greasec baking sheets.
7. Bake in 350ºF oven about 8 minutes.

My goto oatmeal cookie recipe. I've been baking it for 30 years and everyone loves them. You never miss the butter....Don't waste your time with the hot water and baking soda...just mix the baking soda in with the flour and salt and skip the water
