Oatmeal Cookies

Whether you like 'em with raisins, chocolate chips, nuts, or plain, oatmeal cookies are an old fashioned treat that will warm your heart and your stomach. This is a very old recipe made and perfected by the loving hands of my very own grandmother. She is amazingly talented at making desserts and these cookies are NO exception.

Five stars for taste, three stars for directions, hence four stars. I had to go back and forth to check that I had used all ingredients plus that the directions were somewhat "short". What I did was: soften the margarine, add dark brown sugar and whisk for a few minutes. I then added the eggs, one by one and whisked until they were fully incorporated. In a separate bowl I sieved the flour with salt, baking soda and the two teaspoons of ginger I used instead of vanilla. Added this to the dough and mixed thoroughly. After that the hot water and then the rolled oats and chocolate chips (my choice this time) and mixed it all in to a smooth dough. I got 45 cookies, using one tablespoon of dough for each cookie (don't know how big you have to make them to get 24 as the recipe states, mine were normal size). The cookies baked for 13 minutes and were then crispy on the edges and chewy in the middle, perfect. They do not spread, the way you spoon them on the cookie sheet, that's how they bake. All in all they were very good and I will try with raisins, craisins and nuts. Thanks for posting.
