This recipe is from a good friend in Arizona. I was on a quest to find different pancake recipes a few years back - for versatility. She gave me this - we love it!
- 1 1⁄4 cups regular rolled oats
- 2 cups buttermilk
- 2 eggs
- 1⁄4 cup oil
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 tablespoons sugar
- 1⁄2 cup whole wheat flour
- 1⁄2 cup white flour
- Put all ingredients in a blender. Pulse until mixture is smooth.
- Pour onto hot griddle.
- Serve with butter and syrup.

I wasn't exactly sure what you meant by rolled oats, because both the quick and old fashioned oats appeared to be rolled on the box. Anyway, I used the quick oats and just threw everything in the food processor (don't have a blender) and it was super easy and fast. I also like the fact that these are more nutritious than regular pancakes. Very good. Thanks for sharing.
Really great pancakes. I love that you just put it all in a blender - EASY! I served them with peanut butter syrup.
