Directions

  1. Pour the boiling water over the quick oats, shortening, salt, molasses and 1/2 cup sugar.
  2. Let stand until lukewarm.
  3. Dissolve yeast and sugar in 1/2 cup lukewarm water and add to oat mixture. Add flour and knead until firm.
  4. Let stand until double in size. Form into 2 loaves and let rise again until double in size. Bake at 350 degrees for 1 hour.

This bread had a nice texture and was kind of sweet (not too sweet, though) and moist. It takes a long time for the boiling water mixture to become lukewarm--I made two pizzas (crust and all) while it was cooling off! Nice bread, though.
