Oatmeal, Banana, Applesauce Bars

  • Preheat oven to 350°.
  • Spray 9x13-inch pan with cooking spray.
  • Combine: flour, baking soda, salt, cinnamon in bowl set aside.
  • Combine: sugars, and butter and beat with mixer till well blended.
  • Add applesauce, eggs, and vanilla beat with mixer till smooth.
  • Add bananas with mix and mash by hand or with mixer (I’ve done both).
  • Stir in flour mixture till just combined.
  • Stir in oats.
  • Pour into greased pan.
  • Bake till golden brown, about 20-30 minutes depending on oven.
  • Cool and cut into bars!

  1. Followed directions, only added some chocolate chips, maybe that was the problem, but they were falling apart. I suppose you could cut it into bars, but mine simply didn't hold together. Also, the oats didn't soften enough, i think maybe instant oats might have been better, as it is I can feel the oats grating my teeth. Won't make again.
     
  2. Wonderful aroma and taste! The batter was more than I could comfortably accommodate in a 9 x 13 so I put it in an 11 x 15 pan. I ended up baking the bars for 15 minutes longer than indicated because the center was still too moist at 30 minutes. The bigger size pan yielded 40 roughly 1 inch cubes since the batter had risen beautifully. I will make this regularly. Thanks for sharing a really great recipe.
     
  3. Moist, tasty, quite healthy - thanks! You could probably cut 20 squares out of this. I didn't change a thing on this recipe, but added chocolate chips on top. Delicious!
     
  4. Wonderfully moist and flavorful bars. Will make again. I sprinkled with mini chocolate chips.
     
  5. I used 4 small bananas and sprinkled mini chocolate chips on top of the batter for an extra treat. These are excellent with or without adding the choc. chips! Mine did best in a glass pan for 30 minutes exactly. I'm much happier to give these to my kids for a morning snack than many of the "cereal bars" from the store which are filled less nutrition. They love these... you will too!

Tweaks

  1. I made some modifications to make a little bit healthier - Did 1/2cup of butter instead of 3/4cup and a whole cup of applesauce. I also halved the sugars so 1/4cup regular sugar and 1/2cup brown sugar. Added a little bit of chocolate chips and they're great!
