- 177.44 ml shortening
- 295.73 ml firmly packed brown sugar
- 1 large egg
- 59.14 ml milk
- 7.39 ml vanilla
- 236.59 ml flour
- 6.16 ml cinnamon
- 2.46 ml salt
- 1.23 ml baking soda
- 1.23 ml nutmeg
- 709.77 ml quick oats (not instant or old fashioned)
- 236.59 ml peeled diced apple
- 177.44 ml raisins (optional)
- 177.44 ml coarsely chopped walnuts (optional)
directions
- Preheat oven to 375° and grease cookie sheet.
- Combine shortening, sugar, egg, milk and vanilla in large bowl.
- Beat at medium speed until well blended.
- Combine flour, cinnamon, salt, soda and nutmeg in a small bowl and mix into creamed mixture at low speed until just blended.
- Stir in oats, apples, raisins and nuts.
- Drop rounded tablespoonfuls of dough about 2-inches apart onto prepared cookie sheets.
- Bake for 13 minutes or until just set.
- Cool for a minute or 2 on cookie sheets and then remove to a wire rack to cool completely.

These are absolutely divine! If you like Oatmeal cookies, you'll love these!!! DH doesn't really care for cooked raisins, so I left them out, but I think as well as he liked these, I'll give a few raisins a go too next time. I couldn't believe how fast these went. Within minutes after the first batch came out of the oven they were gone. They turned out soft and chewy. I used Granny Smith apples, my favorite for baking and the cookies weren't too sweet, nor the apples too tart. I thought everyone would have had their fill and I'd have some for DH's lunch tomorrow. NOT!!! Thanks for sharing a really great and healthy recipe Karen!

Amazing. Fluffy and on the lighter side. I loved these. I made one change though, I used half of the shortening and added a half a cup of unsweetened applesauce. Delicious and healthier too :) I didn't put raisins or nuts in it, which made the cookie lighter. I highly recommend using applesauce or apple butter!

10 Stars..I tried this recipe to avoid wasting some extra apples. What a wonderful surprise. These are GREAT! What a nice change from chocolate chip cookies. I exchanged the flour with whole grain flour which gave them a light but hearty texture. These did not last 24 hours. Next time I will add more diced apples and walnuts. Thanks!

These cookies are "quite good" as my husband says. I made a few changes as I am always tweaking recipes to make them more heart healthy. I added flaxseed, reduced the brown sugar by 1/4 cup, used homemade applesauce for 1/4 cup of the shortening and 1/4 cup of whole wheat flour. These cookies are so good I think we'll have them for breakfast!

First of all, I normally never rate a recipe I altered, but since I'm giving it 5 stars anyway I figure what the heck. These were really great! Instead of the trans fatty shortening (eww!) I used 1 stick of unsalted butter and 1/2 cup of homemade apple butter. The reason I went this route is because I was really looking for a recipe that had apples and apple butter in it, but I couldn't find one. At first I thought that I would cut out part of the sugar and cinnamon because of the apple butter, but it ended up being bland without it (most likely due to the reduced fat), so I ended up adding all of it at the end anyway. I followed the recipe as is other than that and they turned out great! I reccommend the walnuts and walnuts most definitely:)

I made these to include with my first Christmas cookie baskets. Reviews are raving about how good they are. I did sub the shortening and that may be my shortcoming. They turned out so bland that we had to douse them in peanut butter. Even then, they're barely "good". I subbed half and half of apple sauce and olive oil instead of the shortening. One viewer said they used apple butter and I searched online to see if that'd work. I found out it would. It made A LOT of cookies too. I have so much left over, I can feel the pounds come on... <br/>So diced apples were gala for me. They are chewy.

The first time I made this recipe, my husband announced that it was his new favorite! It reminded me a little bit of spice cake. The recipe was very easy to follow, as well. I did change the recipe a bit. I used olive oil instead of shortening (it is what I normally have on hand), added a touch more flour, and didn't use raisins. I used dried cranberries instead, and it definitely was a delicious flavor combination. Thanks for the recipe!
