These are absolutely divine! If you like Oatmeal cookies, you'll love these!!! DH doesn't really care for cooked raisins, so I left them out, but I think as well as he liked these, I'll give a few raisins a go too next time. I couldn't believe how fast these went. Within minutes after the first batch came out of the oven they were gone. They turned out soft and chewy. I used Granny Smith apples, my favorite for baking and the cookies weren't too sweet, nor the apples too tart. I thought everyone would have had their fill and I'd have some for DH's lunch tomorrow. NOT!!! Thanks for sharing a really great and healthy recipe Karen!

Amazing. Fluffy and on the lighter side. I loved these. I made one change though, I used half of the shortening and added a half a cup of unsweetened applesauce. Delicious and healthier too :) I didn't put raisins or nuts in it, which made the cookie lighter. I highly recommend using applesauce or apple butter!

These cookies were wonderful!!! We have always enjoyed a cakey cookie at our house and these cookies fit that bill to a TEE. The flavors blended just right to give this cookie excellent taste. I am very glad we doubled the recipe the first time or I am sure we would be mixing up another batch again. Thanks for sharing a super recipe!

10 Stars..I tried this recipe to avoid wasting some extra apples. What a wonderful surprise. These are GREAT! What a nice change from chocolate chip cookies. I exchanged the flour with whole grain flour which gave them a light but hearty texture. These did not last 24 hours. Next time I will add more diced apples and walnuts. Thanks!

Delicious! I have made these cookies several times in the past few months (the first time on my first date with my boyfriend, who loved them!). I also didn't use raisins, and the apples added a wonderful texture and flavor. A great way to use the leftover apples no one wants to eat, but are still good for cooking with. Thanks for a great, yummy recipe.

Really tasty and fluffy, almost cake-like texture. Just the right amount of cinnamon, too. I had to substitute a little butter, as I ran out of shortening, but they still came out great; may try all butter next time...

These cookies are delicious! I made this recipe exactly as written... though we use non-hydrogenated shortening to avoid the trans fats and I'm not sure if that would make a difference. I also lined my cookie sheet with parchment so that greasing the sheet wasn't necessary. These turned out moist, chewy and very tasty. Mine didn't seem to have the troubles other reviewers mentioned. The only exception is that if you try to sneak one while too warm they do fall apart. If you wait until well cooled they stay together just fine. I should note that I pulled the sheet of parchment (with the cookies on them) off the cookie sheet to cool. Thanks, Karen for a great recipe!

I needed some cookies for our sack lunches this week and was in the mood for a nice, fall-like cookie and came upon your recipe. Came together in a flash; decreased oil to 1/2 c and still had to add 1 additional cup of flour to get the cookies to even come together enough to bake. Baked up right at 11 minutes; are nice an moist and very hearty. More of an oatmeal cookie taste, apple and cinnamon a very subtle so I may increase both of those next time and sub part of the oil for applesauce. Thanks for posting a nice fall cookie recipe!

These are delicious! I was looking for a different kind of oatmeal cookie and this recipe was the big winner. I usually follow the recipe exactly but sometimes I substitute white chocolate chips for the nuts...Yum! Thanks, Karen, for posting. These are a big hit in my house.

I brought this to a dance and everyone enjoyed this cookie. I used 1/2 cup butter, 3/4 cup brown sugar and two cups oats. Otherwise followed as written. 3/4 cup sugar made them plenty sweet for our taste.

awesome cookies! incredibly easy to make. i would add more nutmeg to mine, but that is just personal preference. also the only modification i did was to use craisins.

The first time I made this recipe, my husband announced that it was his new favorite! It reminded me a little bit of spice cake. The recipe was very easy to follow, as well. I did change the recipe a bit. I used olive oil instead of shortening (it is what I normally have on hand), added a touch more flour, and didn't use raisins. I used dried cranberries instead, and it definitely was a delicious flavor combination. Thanks for the recipe!

I love it when I can make something good for you (apples) mix with something that tastes yummy and "not so good for you". These tasted like apple cinnamon muffins. I just used sticks of butter as well, and had no problem with them spreading. Thanks for a yummy recipe!

Super Great cookies! I did change 2 things 1 is I used vegetable oil and the second was I used Craisins in stead of the raisins. Will keep this and make again and again! Thanks for posting!!!!!!
