Oat Bran Health Bread

  • Add water, yeast, canola oil and honey to the pan of the bread machine; stir to dissolve yeast. Let stand until creamy, about 10 minutes.
  • In a large bowl, stir together oat bran, whole wheat flour, bread flour, flax seed meal, wheat gluten and salt. Pour this mixture into the pan of the bread machine. Select Whole Wheat cycle; press Start.
  • After the dough has risen, remove it from the bread machine and turn it out onto a lightly floured surface. Form into a loaf shape and place in a lightly greased 9x5 inch loaf pan. Let rise until doubled, about 45 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped.

  2. I did it in the bread machine completely (whole Wheat long program) and turned out great . This is the second time I baked it and added 2 extra honey spoons . Great great bread !
     
  3. This makes a hearty, dense, moist loaf that has a wonderful nutty flavor from all of the grains. I made the recipe as written except I added the wet ingredients first, the dry ingredients next, and the yeast last (this is how my bread machine recommends to do it). After the 2nd rising (my whole wheat cycle has 3 rises), I removed the dough, put the dough into a loaf pan for a final rising before baking. We loved the chewiness and nuttiness of this bread. Next time, I think that I would add some more honey as I think it was lacking the sweetness that compliments these hearty grains. *Made for Fall 2009 PAC*
     
  4. As other reviewers suggested, I threw it all in the bread machine and let it go on the dough setting. The dough came out beautiful, although I was a bit worried if I should add more water, as a previous reviewer suggested, but am glad that I didn't. The flavour is fantastic - nutty but not heavy like some multigrain bread can be. Wonderful recipe! Made for Alphabet Soup Tag.
     
  5. This makes a dense, but moist loaf with a chewy texture. Great for with a bowl of soup. This is the first time I have added flax seed meal to my bread and I loved it. I also skipped the first step and just put everything in my machine in the order recommended for my machine and let it go through the knead cycle, and then finished by hand. Thanks for posting!
