YUMMY!!! LOVED IT!! I didn't add the corn because I increased the recipe to make a batch and a half and my crock pot couldn't hold a drop more :) But even without the corn everyone gobbled it down. Fantastic burrito recipe

I used petite diced tomatoes instead of tomatoes with chilies because I don't like things too hot and I didn't add the chicken broth. I also used six chicken breasts. I cooked mine on high for four hours. I did make up some in tortillas but they were too juicy and made the tortillas soggy so the rest of the filling I froze in freezer bags and then thawed and made the tortillas. We enjoyed them this way. We enjoyed the taste of these and they were easy to make.

This is a great recipe! The only major changes I made were to substitute one whole shredded chicken (using the stovetop directions) for the chicken breasts, and frozen corn for the canned. Followed all the other directions to a T - I used spicy Rotel and a flavorful salsa, so no other seasoning was really needed. I ended up freezing half as taco-sized burritos, and half as-is, to make into Quesadillas... this recipe reheats nicely, and was a hit with everyone! Thanks so much for sharing!

I really enjoyed this recipe. I only made up the filling and froze it in ziploc bags... I take out a bag and let it thaw for burritos, quesedillas, tacos, etc in a snap! I made a double batch and got enough filling for at least 10 meals for my family! My favorite way to eat this is in quesedillas, I just lightly butter 2 flour tortillas, put one in the pan, sprinkle w/ cheese, add filling, and more cheese, then put the other tortilla on. I just finished my last bag of this and I am getting ready to make a new batch! I did have to season it up quite a bit, the recipe as written seemed a bit bland to my taste. I added more cumin, some chili powder, garlic powder and salt and pepper. Thanks for the great idea!!

this recipe is so tasty and easy. placed it all in a crockpot and left it for the day. i did add some chicken burrito seasoning. next time i'll throw in pinto beans and extra green chiles. i did cut the recipe in half (just 3 of us) and still have plenty of leftovers. thanks
