OAMC Chicken Fried Rice

"I know there are many fried rice recipes, but here is my own version of a favorite quick OAMC lunch and dinner we all enjoy. I hope you do too! To make it OAMC just portion out one cup of mix into freezer bags, thaw in the microwave for about 2 minutes, then stir fry in some oil for about another 3 minutes to get that "Fried" taste and texture. This recipe makes a TON!"

  • Cook water, rice, and boullion cubes for about 30 - 40 minutes, or until done.
  • Scramble the eggs.
  • Mix all of the ingredients together in a large bowl.
  • Portion into bags for lunches or dinners. One cup servings is what I did. I was able to get one five cup bag for a dinner and 5 one cup bags for lunches.

  1. I made as directed but my Jasmine rice package had suggested 6 cups of water vs 8. No matter it all worked out well. Instead of using plain water and bouillon cubes I used a box of fat free chicken broth. For the eggs I used liquid egg whites equal to 6 whole eggs. This will be nice to have on hand for nights when time is short. Really good flavor. Thank You for sharing.
     
  2. Made this last nigh. I loved it. Added shredded carrots. It was really good. Kids liked it too. My littlest one does not care for fried rice, she prefers plain white rice. She ate almost a whole bowl. My picky son ate a whole bowl too. It make a lot!! Had a lot left over to freeze. Will be adding to regular menus. Thanks!!
     
  3. This was really great! though I admit I did change alot of it for My tastes. I cut raw chicken in small pieces and sauted with a little butter,and added pepper and season salt to the chicken, then I also used fresh carrots, I Just cut tiny, steamed in the mic most of the way then threw in with the chicken to finish cooking. The Jasmine rice though most def. made the difference! I Also left out the eggs because I don't like eggs in mine but i'm just not an egg person lol. i also let it all cook together in the pan a little while instead of just tossing together. very yummy!
     
  4. I have tried to make fried rice in the past and couldn't seem to get it right. I really like this- have made it twice now and both times it turned out great. Very easy to prepare!

One who is allergic to dairy and soy, another who is a pescatarian, one a voracious carnivore who recently told me she likes meat that moo's when it's served to her, and another who is transitioning from vegetarian to vegan. With all these issues in our home with food and cooking I would die without this site! <br> <br>I like to OAMC and finding new ways to cut down my budget. I also like scrapbooking, reading, and cooking new things. While I enjoy cooking I just don't have tons of time in the kitchen to make complicated dishes, so I really like easy, fast, cheap, and healthy meals.
