A quick nutty whole wheat bread that can be prepared in short order. Great for morning because within just over an hour you can have a loaf of bread to feed your family.
- 2 1⁄4 cups white flour
- 1 1⁄4 cups wheat flour
- 3⁄4 cup walnuts, finely chopped
- 2 tablespoons brown sugar
- 2 1⁄2 teaspoons fast rising yeast
- 1 teaspoon salt
- 1 cup water
- 1⁄3 cup yogurt
- 2 tablespoons butter
- Combine 1 cup white flour and wheat flour, walnuts, sugar, yeast and salt. Heat water, yogurt, and butter to 120 degrees; add to dry ingredients; beat until smooth. Stir in more flour to form a soft dough. Turn on a floured surface and knead until smooth and elastic-4 minutes. Shape into ball, cover for 20 minutes. Bake 400 degrees for 25-30 minutes.
Top quality bread. You might expect from it having nuts that this is a sweet bread but it's not. It makes a great sandwich bread I had a tuna sanny made with it and I just know that it would be really spectacular for grilled cheese. It makes a beautifully textured bread. I used the bread maker to make the dough and then finished it in the oven. Marvelous bread for very little effort! Made for Spring '08 PAC
