  • In a large bowl, mix flour, stevia, baking powder, salt, and flax seeds. Make a well in the center, and pour in remaining ingredients.
  • Heat griddle or frying pan over medium high heat. Lightly spray with cooking spray or oil. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

  1. We used this recipe for OAMC '08. We made this with Splenda, not stevia, and coconut milk instead of almond milk, all out of necessity, and these were very good. Even the pancake picky eater had seconds.We also tried slicing some bananas into some and they were really tasty. We froze some and reheated them in the microwave for about 25 seconds and they were still good. Thank you for sharing!
