This topping has quite a few uses. Srinkle over cooked cauliflower, broccoli or potatoes. As a coating for racks of lamb, or sprinkle through meat and vegetables stir-fry.

Ingredients Nutrition

  • 1 (70 g) packet almonds, sliced
  • 14 cup pine nuts
  • 14 cup sesame seeds
  • 1 tablespoon oil
  • 1 teaspoon chili paste
  • 1 teaspoon cumin, ground
  • 1 teaspoon coriander, ground
  • 1 tablespoon fennel seed
  • 12 teaspoon salt

Directions

  1. Mix almonds, pine nuts and sesame seeds together.
  2. Heat oil in a fry pan.
  3. Add chilli paste and fennel seeds, stirring to combine.
  4. Add almond mixture and toss often over a low heat for 2-3 minutes or until nuts have stared to brown and smell fragrant.
  5. Sprinkle over salt and cool.
