Nutty Fruity Stuffed French Toast

When turning your PB&J into french toast, you get a breakfast that's more substantial than most! (Hey, I'm a poet and I didn't even know it!) Recipe is credited to Wanda Byars of Norman, Oklahoma and is from the La Leche League International Cookbook "Whole Foods for the Whole Family." Cook time is estimated time to cook 'sandwiches' with estimate of about 5 minutes each.

Ingredients Nutrition

  • 12 cup peanut butter
  • 12 cup chopped raisins or 12 cup dried apricots or 12 cup any dried fruit, of your choice
  • 2 tablespoons apricot preserves or 2 tablespoons preserves, of your choice that combines well with the dried fruit you chose
  • 1 dash cinnamon
  • 12 slices whole wheat bread
  • 2 eggs
  • 12 cup milk or 12 cup soymilk
  • 2 tablespoons butter or 2 tablespoons oil (you may use less if you are using a nonstick pan or use cooking spray)


  1. Mix peanut butter, fruit, preserves and cinnamon.
  2. Spread six of the slices of bread with this mixture.
  3. Top each with the remaining slices of bread, just like a sandwich.
  4. Beat eggs and milk together.
  5. Dip sandwich lightly in the egg mixture, letting excess drip off.
  6. Melt butter in skillet and fry sandwiches over medium heat, browning on each side.
  7. Serve hot.

I have this same recipe and made it for my kids. They loved it. I used strawberry jelly and raisins. My 18mos old ate every bite, thats saying a lot he is very picky. Thanks for posting Roosie!

This was excellent. I used wild plum jam and a mix of raisins and craisins. I used skim milk and only egg whites, and cooked these on a griddle with no butter. (I used light bread for mine and regular whole wheat for the rest.) Really nice flavor. I liked mine with a smidge of real maple syrup though my husband preferred his plain. These would be great to make and hand to kids as they walk out the door. Lots of nutrition without a lot of drip. (Not that regular pb&j is drippy. But it is a nice change.) My only issue is how hard it was to spread the peanut butter mixture. I recommend dryer bread, or toasting it first. Mixing the peanut butter, jelly, and fruit (plus cinnamon which gives it a wonderful flavor so don't leave it out!) makes for a thick paste which doesn't go onto soft bread very easily without ripping it. A nice healthy breakfast. Thanks Roosie!
