    Nuts are a good source of protein but they are also high in fat. This recipe uses just a hint of peanut butter for added flavor for a healthier fruit salad.

      Drain pineapple and reserve juice.

      In a large mixing bowl, combine pineapple, carrots, celery, pears and raisins.

      In a small bowl, combine yogurt, peanut butter and ginger. Add pineapple juice sparingly to get a smooth consistency (about 1 tablespoon of juice).

      Stir dressing into fruit to coat.

      Cover and chill.

      After making this and letting it set I decided to add an apple to the mix. This is something that I enjoy but not my family. They aren't into alot of healthy foods and so I knew going in that this would be my cup of tea more than the fam. I was right. I enjoyed this lite salad. It somewhat reminds you of Waldorf Salad. Thanks Susie!!
