If asked, "do you like squash", my answer would be, No; at least until I made this recipe. My husband always had squash with his Thanksgiving meals growing up, so for his sake, I planned to add it to our Thanksgiving menu this year. A friend gave me two acorn squashes, so I went searching for a recipe and found this one. Everyone at dinner commented on how good it was and I've had it leftover twice. Thanks for sharing! It'll become a standard part of our annual Thanksgiving meal.

  1. Cook squash in boiling salted water for 15 minutes, or till tender. Drain well. Cut rind from cubes.
  2. Combine squash, butter, brown sugar, nutmeg and salt; whip till smooth.
