- 2 cups flour
- 1⁄4 cup sugar
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon nutmeg or 1 teaspoon mace
- 1⁄4 cup vegetable oil
- 3⁄4 cup buttermilk
- 1 egg
- 1 cup icing sugar
- 1⁄3 cup boiling water
- 1⁄2 cup finely chopped nuts
directions
- heat oil or fat 3-4 inches deep in fryer or pot to 375°F.
- combine flour, 1/4 cup sugar, baking powder, baking soda, salt and nutmeg in bowl.
- add oil, buttermilk, and egg, beat till smooth.
- drop batter by the spoonful into hot oil, 4 or 5 at a time, and fry 3 min or until golden brown on both sides.
- Drain on paper towels.
- combing icing sugar and water, use to glaze freshly cooked puffs.
- Roll glazed puff in nuts.
