a staple vietnamese fish-sauce based dipping sauce.
- 1 cup sugar
- 1 cup lime juice, freshly squeezed
- 2 1⁄2 cups water
- 1 head garlic, minced
- 5 -6 Thai red chili peppers, minced (optional)
- 1 cup fish sauce
- mix sugar, lime juice and water - dissolve sugar completely.
- add fish sauce. mix well.
- add garlic and chilies.
- modify to taste with lime, sugar, water or fish sauce.
- serve as a dipping sauce. refrigerate unused portions.
