- 16 dried red chilies
- 16 garlic cloves
- 29.57 ml sugar
- 236.59 ml fish sauce
- 118.29 ml vinegar
- 118.29 ml lemon juice
- Mince chilies and garlic finely and place in a mortar. Mash with the heel of a cleaver or pestle. Add sugar and stir until it dissolves. Add fish sauce, vinegar and lemon juice, stirring between each addition.
This had a beautiful balance of flavor and was a great dipping sauce for some mini spring rolls. Only change I made was to use fresh chilies rather than dried.
