Wonderful! I found that I had no problems whatsoever with this recipe but I changed things around a bit. I used applesauce for the oil, all whole wheat pastry flour, Splenda & increased the bananas to 1 cup. Baking time was only 6 min! I also used 1/2 cup mini choc chips. Easy, moist & quick. Thanks!
Don't go into these expecting a regular chocolate chip cookie, because they taste quite different. That said, they are really an excellent little cookie. I was calling them banana cookies with chocolate chips and pecans (which I used instead of walnuts). I used all WW pastry flour and sucanat (an unrefined sugar). These had the problem I have with all vegan chocolate chip cookies that use oil, that the chocolate chips never quite incorporate into the batter. It makes for some slightly difficult prep. And these turn out sort of lumpy; they don't spread like a typical chocolate chip cookie with butter. That said they were tasty and I was glad to feed them to the kids!
