Not Your Mama's Chicken Salad

ingredients
- 4 large boneless skinless chicken breasts
- 473.18-709.77 ml red seedless grapes, halved
- 236.59 ml sliced almonds, toasted
- fresh parsley, to taste
- 177.44 ml mayonnaise (NOT Miracle Whip or any other salad dressing)

CREAMY HERB DRESSING
- 236.59 ml plain yogurt
- 236.59 ml sour cream
- 29.58 ml chopped fresh parsley or 29.58 ml fresh cilantro
- 2.46 ml lemon & herb seasoning (I wandered the spice aisle in the grocery store, and there IS such a thing)
- 4.92 ml honey (I did half and half) or 4.92 ml sugar (I did half and half)
directions
- FIRST: Prepare herb dressing.
- Using a hand mixer, beat yogurt and sour cream together well.
- Stir in remaining ingredients.
- Thaw skinless/boneless breasts, if necessary.
- Put them in a large, sealable container with 1/3 of the dressing and marinate in the fridge for a few hours.
- Cook on hot grill, but be careful to not OVERCOOK, otherwise all you'll be able to taste is the charred chicken.
- Cool and cut into bite sized pieces.
- Toss with grapes, almonds, parsley, mayo and remaining herb dressing (amount of dressing varies to your desired consistency).
- Chill.
- Serve alone or on bed of greens with nice, crusty bread and a tall glass of iced tea or lemonade.

<p>I firmly believe everything tastes better when you had nothing to do with the preparation or clean up. <br /><br />I used to have a few favorite cookbooks, but this site has easily replaced them....I love the ease of searching for exactly what I need and the feature of seeing what others have rated the particular recipe. <br /><br />I'm a mother to 2 kids.
