  1. Dissolve yeast in 3/4 c warm water with 1 tsp sugar. Let sit 5 minute.
  2. Sift together flour, 3 1/2 T sugar, cardamom and salt.
  3. Add milk mixture, 1 egg, 51/2 oz soft butter and mix well to form dough. Knead 5 minutes.
  4. Add in raisins and 1/4 c chopped almonds.
  5. Turn dough into greased bowl and let rise 20 min in warm place.
  6. Form dough into long roll on floured board. Use rolling pin to flatten into 16x4" shape.
  7. Mix 4 oz soft butter with 4 1/2 T sugar in bowl with wooden spoon. Spread over roll, staying within 1" of edges.
  8. Sprinkle with raisins and 1/4 chopped almonds.
  9. Roll together to form long cylinder. Twist it and place on buttered baking sheet.
  10. Let rise until doubled.
  11. Brush with egg white.
  12. Sprinkle with 1/4 c chopped almonds and 1/3 c pearl sugar or granulated sugar.
  13. Bake at 425F for 20 minutes.
