These are the best recipe I've found for thing pancakes, they're delicious, easy to make and perfect with lemon and sugar. It is important to let the batter rest for that 20 minutes. Super easy, I've made these 20+ times over the past two years, never found a better recipe.

This recipe is not for pan cakes, it is a crepe recipe, and not a good one of those. Far too much milk in it. Hard to cook, and not very tasty done.

As a little girl, I remember when I stayed at my Norwegian grandmother's house ( we called her Bestemor, which is grandmother in Norwegian) and I loved when she made me Norwegian pancakes for breakfast. I recall sitting at her kitchen table in my pajamas ,in her pretty little kitchen that always had crisp white cotton curtains, anticipating her delicious pancakes. She would place the pancake on my plate and I would then take a pat of butter, melt it over the pancake, sprinkle on some sugar, roll up the pancake, and then taking my fork and knife enjoy my favorite dish Bestemor would make. Bestemor passed away many, many years ago, but when I used this recipe this morning and feed my family of 5, I felt like I was getting a hug from my grandmother....priceless. I am not sure if she used vanilla in hers, I will ask my mother, but my family loved this recipe. My son said he could sit here all day and eat them. So I guess I will continue the yummy memories. I was able to get around 24 pancakes from this. I had considered doubling the recipe at first and am glad I didn't. Hope you try this and enjoy!

These were wonderful thin pancakes morgainegeiser. I enjoyed them so much. I put violet jelly on the inside and garnished with a little icing sugar. I will make these again, into my keeperbox this recipe goes. They were quick and easy to put together and tasted great. Thanks for sharing.

This was a tasty breakfast treat! I made half of the recipe and got 8 pancakes. I had a little trouble with the technique so the first two didn't look too good but once I figured out 2 things - tilt the pan slowly so the batter can set a bit as it coats the bottom of the pan, and resist the urge to flip them too soon - they came out fine. I warmed some honey with just a little strawberry jelly and drizzled that over the pancakes. Thanks for sharing the recipe!

Made as directed. Cut the recipe in half and got quite a few very large pancakes. In my mind, this is basically a crepe recipe. It was very good.

I am lovin' these Norwegian Thin Pancakes. It felt more like a dessert than a breakfast, and I loved every bite. I used butter and seedless strawberry preserves, rolled them up and topped them off with some whipped cream. I think these would also be great with some homemade blueberry syrup. Made for Nov 2010 Aus/NZ Swap.

Very nice and light more like a crepe. Made exactly as directed. We enjoyed them with butter and homemade cherry syrup. Note, we got at least 10 pancakes out of the batter. Made for ZWT6 Voracious Vagabonds.
