Directions

  1. Heat the oil in a small skillet. Add the meat, scallions and soy sauce and stir-fry for 2 minutes.
  2. Whisk the eggs and broth together.
  3. Place the meat mixture into a microwave safe bowl. Pour the egg/broth over the meat mixture.
  4. Cover and microwave on high for 5 minutes. If not firm, microwave for additional 30 seconds.
