Noodles in Soup

- 226.79 g cooked boneless skinless chicken
- 4 chinese dried mushrooms, soaked
- 113.39 g bamboo shoots, rinsed and drained
- 113.39 g spinach, shredded
- 2 spring onions, finely shredded
- 226.79 g egg noodles
- 473.19 ml chicken stock
- 29.58 ml light soy sauce
- 29.58 ml vegetable oil
- 4.92 ml salt
- 2.46 ml sugar
- 9.85 ml chinese rice wine or 9.85 ml dry sherry
- 0.19 ml sesame oil
- 4.92 ml red chili oil (optional)
directions
- Cut the chicken into thin shreds.
- Squeeze dry the soaked mushrooms and discard the hard stalk.
- Thinly shred the mushrooms, spinach , bamboo shoots and spring onions.
- Cook the noodles in boiling water ,drain and rinse under cold water.Set aside.
- Bring the stock to a boil add 1 tbsp soy sauce and pour over noodles.Keep warm.
- Heat the oil in a heavy frying pan or wok,
- Add 1/2 of the spring onions add the chicken and the vegetables to the hot oil.
- Stir fry for about 3 minutes.
- Add all the seasonings and blend well.
- Pour the mixture over the warm noodles and put the remaining spring onions as a garnish and serve imediately.

Hi Brenda, this was yummy. I was a bit short on the spinach as I only had a wee bit, but everything else was as it should be. It was so quick to make and we had it for lunch. DH likes this kind of soup, and loves noodles, so he was very happy. It's a good stand by recipe as I had everything in my freezer or larder I used ready cooked chicken breast from the freezer and you always have spring onions in the fridge. Thank you for posting. <p>I have 5 kids, 12 grandkids and now have 6 great grandchildren. I don't get to see them as much as I would like. I love to garden and I am also a broadcaster on radio and the net.. Recently married to an American although remarriage is something I thought I would never do again. He traveled 3000 miles with his cat to come to marry me. <br /><br />I owned my own craft store for 10 years but gave that up after a huge craft discount depot opened just 4 blocks from me. I used to teach 6 days a week; crafts like quilting, dried wreaths, Christmas ornaments, etc.</p>
<p>I had open heart surgery and recovered nicely.I am not the best patient in the world as I want to get going and get back to work and my life as I knew it.</p>
<p>I have retired and do help out at a soup kitchen for the homeless and 1 morning a week I make French Toast at a community center that supplies 26 schools with free snacks and sandwiches for the kids <br />I have been knitting blankets for Blankets for Canada an organization that helps the homeless keep a little bit warmer. I also knit for many different charities that supply kids with warm clothes.
