Noodle and Hash Casserole

"This recipe comes from a little book called ABC of Jiffy Cookery. I've had it for over 50 years. I haven't cooked any of the recipes yet. I'm putting it here so I can find them easier."

  • Drain peas, reserve liquid. Measure liquid and add milk to make 1 1/2 cups. Melt butter, blend in flour and salt. Add liquid mixture and bring to a boil, stirring constantly. Remove from the heat; stir in grated cheese and tabasco.
  • Place 3/4 cup cooked noodles in the bottom of pan 6 x 10 inches; add a layer of peas, hash and cream sauce. Repeat layers until all ingredients are used, ending with hash in a border around edge. Bake in a 350* oven 30 minutes.

  1. Not a bad recipe. It was quick and easy. I would recommend using egg noodles as they would hold the cream sauce well. Also, this would be a great recipe to make in a dutch oven while camping.
