Yummy and lots of fun to make! I must say Bergy's look a heck of a lot neater than my first few attempts! I used lettuce instead of cucumber and these made a lovely lunch! DH liked them with hoisin sauce to dip into, I liked them with your floating chili soy dipping sauce. Thanks for such a healthy, delicious recipe - I'm going to make them with char sui next time!

I love rice paper rolls- You did say to fill with "my: favorite ingredients so I made them vegetarian using finely chopped lettuce, cucumbers, carrots, Pea shoots, green onions, & coriander. I used Hoisin inside and served wi th the dipping sauce from Baked Lumpia Rolls. I only dipped the rice paper for a minute in hot water doing one at a time. Served as a pre lucheon appetizer with a glass of cold Reisling wine. Thanks Lene you have wonderful recipes.
