I'm glad I stir a few times like you said in the 20 minutes, cause there was no liquid left after 12 minutes. So I added another cup of chicken stock and let cook another 5 minutes additionnal (so total 25 minutes). I used an italian cheese I bought the other day (Fontal) This is so creamy. This is a very nice base recipe. I used aborio rice and it was fab. Next time I think I'll add some mushrooms with a beef broth base. Thanks!
We really enjoyed this side dish. I cut the butter back to 2 T., and I left out the garlic as I was serving it with a very garlicky main course. Otherwise I followed the directions exactly, and we will definitely add this to our keeper file.

This rice was great! I used sharp white cheddar and parmesan for the cheese. Served with Steak and peas. It was easy to make and nice to have something a little different from plain rice. Thanks for posting! Made for ZWT5 :)
