Taken from 'Tasty and Low' Weight Watchers booklet - Tip in the winter try this with swede instead of courgette
- 100 g tomatoes, chopped (sm. tin)
- 2 carrots, chopped
- 1 onion, choped
- 1 courgette, chopped
- 1 vegetable stock cube
- 1⁄2 pint water
- salt and pepper

- Place all the ingredients in a saucepan.
- Cover and cook until the vegetables are soft (about 20 minutes) For a smooth soup, puree all the ingredients in a blender, For a chunky soup, just puree half the mixture.
- Return to the saucepan and heat through before serving.
