this is a time saving version of a classic

  1. combine ricotta cheese, romano cheese, basil, oregano, parsley and pepper in a large bowl -- stir well --
  2. lightly spray a 13x9" baking dish with non stick spray.
  3. Layer in half of the following; zucchini, ricotta cheese mixture, eggplant, pasta sauce and 1/2 cup mozzarella cheese.
  4. Repeat layering, ending, pasta sauce and 1/2 cup cheese.
  5. bake at 375* for 40 minutes.
  6. remove from oven and top with remaining cheese.
  7. Bake for an additional 5-8 minutes until cheese is melted and golden.
  8. let stand 15 minutes before serving.
