These were so good. I added some vanilla, mini chocolate chips and used egg whites. They came out so moist and fluffy. It also added a crumble mixture of 1/4 cup of Brown sugar, 2 tbsp flour and 1 tbsp of butter to the top of the muffins before baking. Delicious!!
I made this recipe and the muffins turned out super moist and delicious! You can't even tell that there's no butter or oil in it. I also tried substituting pumpkin puree instead of bananas and it still turned out super moist. This is an excellent "base" recipe. I plan on using sweet potatoes next in place of the bananas. I made these muffins but used 1 Cup of WW flour, 3/4 C. Quick cook oats The sugar I used was all Brown Sugar added 1/2 C. Choco chips added 1tsp of Vanilla. And they turned out DELICIOUS!! They took an additional 4 mins in the oven so my total bake time was 19 mins. I just ate 3, and don't feel guilty at all!
I just made these muffins and they are deelish :-) Yes they are denser than muffins made with oil, but I personally like a dense muffin. I added some chopped pecans, but that was the only adaptation. I highly recommend this recipe!
Very dense muffins but very good. Added an extra 1/4 cup of banana because I didn't want to waste it, and used 1/2 cup white and 1/2 cup light brown sugar, also added a little vanilla. Definitely grade even papers for the muffins, on mine half stick to the paper.
We substituted 100% whole grain rye flour and used brown sugar. Was amazing. Even the kids liked it.
Mine don't look as pretty as the ones in the picture, I think I over mixed them. But they taste great, nice and moist, full of flavor! I added chopped walnuts as well and I will definitely be using this recipe again!
I made these for me and my roommates and we loved them! Instead of having a cup of sugar just use a cup of unsweetened applesauce and added fresh blueberries and raspberries. Also I used only one cup of gluten free flour mix and 3/4 cup oats to add a different texture! I hope you enjoy
Loved them. Added a couple tablespoons of molasses and mini chocolate chips. They were picture perfect.
Pretty good recipe. I actually added 1 cup of chopped apples to the mix and topped with brown sugar Splenda and cinnamon mix prior to baking and my family loved them. Just make sure that even if you use cupcake liners, to spray.....
