  • In a medium saucepan over a medium heat put water sugar and cream of tartar a stir until dissolved.
  • Bring mixture to a boil DO NOT STIR place candy thermometer in mix and allow to reach hard crack stage 148.8C / 300F.
  • Remove from heat and pour into moulds and let set for 30 minutes.

  1. What can I substitute for cream of tartar if I don't have any?
     
  2. What's the purpose of the cream of tartar? Is it simply for flavoring or does it's help the candy to harden?
     
  3. If you want to include a flavoring, when would you add it?

  2. This recipe in fact works well. I tweaked mine a bit, 2 cups of sugar, 1/4 cup water, 1tsp cream of tartar, 1 dram of lorianns flavoring and food coloring. Perfect mix and no corn syrup! Save $$$
     
  3. I found this to be a really good recipe. I would tweak it by leaving it in the hard crack stage for at least a minute and adding coloring and flavor after you take it off the heat.

  4. This is a recipe for corn syrup. Anything over 240 F is just burnt goo.
     
  5. Its supposed to be 2/3 cups of water. Not two cups. Nice fake reviews though.
