I mixed everything but the milk and used a small cookie scoop to make individual portions on a cookie sheet. I froze these until firm and then put in a zip-lock freezer bag. I take out one, put it in a mug and defrost in the microwave. I add milk and return to the microwave for three minutes. Works great and just takes a couple minutes in the morning.
My daughter is a Starbuck's fan so she was anxious to try this. She enjoyed the taste but found the texture a bit weird as the pumpkin seemed kind of pulpy or thick. We will use the immersion blender to smooth it out the next time we make this and that should be perfect. She topped hers with whipped cream and a sprinkle of Cinnamon just to be fancy. For me, I added some brewed coffee and that was quite nice too. Thanks for the recipe.
Tastes like warm pumpkin pie. I topped with a little lowfat whipped cream and sprinkle of ground cinnamon. Not too sweet. Creamy and delicious. Made for Football Pool Week 4. Thanks and congrats on your win.
