I used a can of cream of celery by mistake and it turned out wonderful
This is a great recipe to play around with and make your own. I replaced white rice with an organic sprouted rice and quinoa blend. I lightly steamed fresh broccoli (keep it crisp) and chopped to add. I sauteed/chopped a half pint of baby bella mushrooms with half a yellow onion and threw in. I used 2 cans of healthy request cream of mushroom soup. I shredded sharp cheddar from the block for a more robust flavor and added a panko crumb topping. I cooked foil covered at 300 for and hour and half b/c I was gone and came home to an amazing smell. I took off the foil and did a quick low broil to melt cheese and brown the crumbs and served immediately with a homemade applesauce. It was DELICIOUS!!!
I think this recipe is a good start. It was good but I think I will play with it a little more to make it awesome. It was nice to a have a different side dish. I may try adding some chicken to make it a light one dish meal as well.
sounds great but if you are going to freeze it how do you not over cook rice? and I want to use this recipe for 25 people. I need to make it asap and freeze it in a big aluminum pan ( how long would it take to thaw out at room temp. then how long to cook. & what temp then it would stay warm over one of those sterno servers there are two sterno's and a metal rack then a lg.pan with water in it then the pan with your food on top of the water to keep it warm and not dry out. Like they serve at weddings and such. Also I really need this info fast !!!Sure hope you can help thanks. alot. Grammie "B"

This was really good. Added a chicken breast and it was a filling whole meal. Everyone in the family ate it...which is almost unheard of in my house! Thanks for the great recipe jaynine...

flavor is good. But I might prefer a recipe that doesn't require cooking the rice first. seems like it should be plausible that a casserole could do that while baking. If nothing else, I'd advise adding more broccoli & being sure not to over-cook your rice.
Love this recipe. Also added leftover rotisserie chicken and a little extra cheese. There were no leftovers.
Terrific flavor! I used mushrooms and real cream instead of the soup that was called for. I also did not follow the recipe to the letter--just threw in the basic ingredients unmeasured. It was awesome!
