A pie I used to make often for my family as a youngster first learning to cook and measure! It was a requirement in our household to serve this pie with vanilla ice cream!

I really liked this...I made a few changes because of what was doing at that moment ...:) -like used a mix of old-fashioned and steel oats 'stead of quick and skipped the egg and butter (adding flax meal mix and soaked seeds to "glue" and "set"...) threw in about 1/4 cup of fat raisins...used organic raw coconut and an oatmeal crust {{recipe#262323}}...very rich, sweet and a nice finish to our Thanksgiving feast (makes for a super start as a breakfast too... pretend it is oatmeal as in cereal and therefore the right and healthy thing to do but lets keep that one between you & me :) )

Directions

  1. Preheat oven to 350 degrees.
  2. Blend all ingredients well and pour into the unbaked pie crust.
  3. Bake for 30-35 minutes or until toothpick inserted in center of pie comes out clean and pie is browned.
  4. Set aside to firm up and serve. Can be served either hot (which I prefer) or at room temperature.
