    Directions:

      Spray a 9" pie plate w/ olive oil.

      Combine cereal and margarine in food processor and pulse until the crumbs are moisten. Press the crumb mixture into the pie plate. Set aside in the refrigerator.

      Mix tofu, agave nectar, and extract until smooth. Spread into the chilled pie crust and refrigerate for an hour.

      Arrange the fruit decoratively on top of the tofu mixture.
    5. 5
      Slowly heat the preserves and lemon juice until melted. Stir and drizzle over the fruit. Chill at least 1 hour to set glaze.
