This is my favorite kind of summertime recipe. Cool, easy and no bake. It's also easy to adapt to a sugar free diet by substituting a sugar free cake and pudding and using skim milk instead of whole. The cook time listed is actually the time it takes to chill.

  1. Crumble angle food cake in large dish.
  2. Mix instant pudding& milk according to the instructions on the package.
  3. Add coconut.
  4. Pour over cake and mix thoroughly.
  5. Top with cool whip, chill.

Mmmmmmmmm Nummmy!!!! Very good dessert and I could have some!!!Thanks for sharing this adjustable dessert Mystergirl! I used low cal instant vanilla pudding and 2% milk, with unsweetened coconut. We don't care for cool whip (personal preferance), so I cut up a banana and folded it in. Almost like banana coconut cream!!! I think this would be wonderfull with any flavour instant pudding and will certainly make it again. Thanks for sharing.
